Grit #1000 is used for sharpening and refining knives. If you have a dull knife with no blade damage, this can be your starting point for sharpening. It is important to note that grit #1000 is considered medium-fine. It serves as the final sharpening stage for lower-quality and softer steels, while for higher-quality and harder steels, it is used as a transition before polishing with finer stones.
