At Santoku Montenegro, we are happy to welcome Shizu Hamono back to our selection of Japanese knives, bringing together centuries of Japanese blade-making tradition, refined craftsmanship, and outstanding cutting performance.
Shizu Hamono is a respected Japanese knife maker from Seki, a city renowned for its centuries-old blade-making tradition dating back to the 12th century.
Founded in 1980, Shizu Hamono combines traditional Japanese craftsmanship with modern culinary needs, creating knives that balance refined aesthetics, precision, and everyday practicality. Each knife is produced under strict quality standards, with particular attention to detail and the finishing of the cutting edge.
One of the distinctive features of Shizu Hamono is its continued use of hand-grinding and hand-polishing techniques, helping achieve excellent sharpness and refined cutting performance. By combining Japanese design principles with practical functionality, the brand offers knives suited to both passionate home cooks and professional chefs.
Shizu Hamono works with high-quality steels, including VG10 in its GEN series and AUS8 in its Yuri and Miyako series. Its collections offer different combinations of performance, appearance, and value.
GEN Series: VG10 stainless steel, a distinctive dark finish, and an elegant blend of traditional and contemporary design.
Yuri Series: Lightweight knives with AUS8 steel, a slim blade profile, and a classic Japanese handle.
Miyako Series: A striking 33-layer Damascus pattern, an AUS8 steel core, and a hybrid pakkawood handle, combining visual appeal with everyday practicality.
At Santoku Montenegro, we value Shizu Hamono for its commitment to Japanese knife-making traditions, carefully finished blades, and designs created for real kitchen use.
The Santoku, meaning “three virtues,” is a versatile Japanese kitchen knife designed for preparing meat, fish, and vegetables. Typically featuring a blade between 165 and 180 mm, it offers an excellent balance of control, precision, and cutting efficiency.
Its relatively flat cutting edge makes it particularly effective for push-cutting and chopping vegetables. The broad blade provides stability and makes it easy to transfer prepared ingredients from the cutting board to a pan or bowl. Its characteristic sheepsfoot-style tip also supports controlled, precise cutting.
Thanks to its compact size and versatile design, the Santoku is an excellent choice for both professional chefs and home cooks. It is especially well suited to preparing vegetables, finely chopping ingredients, slicing fish, and cutting boneless meat.
Compared with longer chef’s knives, its manageable blade length can feel more comfortable in smaller kitchens and for users who prefer a lighter, more controlled knife. Its practical proportions offer a comfortable balance between blade and handle, making it a reliable everyday kitchen companion.
At Santoku Montenegro, we recommend the Santoku to anyone looking for one versatile knife that combines Japanese cutting traditions with everyday convenience.
VG10 is one of Japan’s best-known premium stainless steels and is widely used in high-quality kitchen knives. Typically hardened to approximately 60–61 HRC, it offers an excellent balance of edge retention, sharpness, and corrosion resistance.
Its alloy composition includes chromium for corrosion resistance, molybdenum and vanadium for improved performance, and cobalt as part of the steel’s alloy system. Proper heat treatment is essential to achieving the steel’s full potential.
VG10 can maintain a keen cutting edge through extended kitchen use while offering the corrosion resistance expected from a stainless steel. Although sharpening may require more care than with softer steels, quality whetstones make it possible to restore a very fine edge.
For cooks who value precise cutting, dependable performance, and relatively straightforward maintenance, VG10 is an excellent choice. It represents the combination of performance and practicality that makes Japanese knives so highly regarded around the world.
