Shun Premier Tim Mälzer knives by KAI are a premium series designed for both culinary enthusiasts and professionals. They stand out for their exceptional craftsmanship, cutting performance, and especially comfortable handle.
While functionality is key, the knife also impresses visually, featuring refined details such as the hand-hammered tsuchime finish on the upper blade and the distinct transitions between the 65 layers of forged steel. The handle, made from American walnut, is also meticulously finished.
This model is a 24 cm slicer, ideal for carving roasts and slicing larger cuts of meat into thin slices or steaks. It pairs perfectly with the Premier carving fork.
The Premier series features relatively thin blades with excellent cutting properties and a lightweight feel.

Proper Maintenance

Hand-wash the knife with warm water, then dry it with a soft cloth to preserve sharpness and material quality.

For long-lasting precision, use whetstones, while ceramic honing rods are excellent for fine edge adjustments during use.

Always store the knife properly to avoid contact with other utensils and potential damage.

It is recommended to use cutting boards made of wood, plastic, or rubber, as they are gentler on the blade and prolong its lifespan.

⚠️ Special Note for Traditional Japanese Steels

Japanese knives with high carbon content require special care to prevent oxidation and rust.
