This Zanmai “Revolution” small Santoku is crafted from premium SG2 high‑speed powder steel, heat‑treated to 61 HRC for outstanding edge retention. SG2 steel allows an even thinner grind behind the edge, resulting in laser‑like cutting performance.

The ergonomic, softly curved handle with a unique decagonal profile and a nickel‑silver kuchiwa reflects Zanmai’s refined craftsmanship – a fusion of Seki’s traditional blade‑making heritage and modern innovation. The signature Zanmai fit and finish is visible throughout the knife, from the elegant kasumi‑like polish on the cladding to the finely polished spine and choil.

Proper Maintenance

Hand-wash the knife with warm water, then dry it with a soft cloth to preserve sharpness and material quality.
